The sweetness of apple in a delicious soft texture covered with a cinnamon-flavored crunchy topping – it does not get any better than this! This apple muffin is so delicious, you won’t even want butter on it. The superb texture and the lovely combination of cinnamon with a touch of nutmeg will get everyone’s vote for one of the best muffins ever. Wait until your family and friends try them, they will want more!
Muffins are a great quick breakfast or pick-me-up; the perfect accompaniment to a brunch or salad. They are so easy to make, and they get better and better one or two days after they are baked (although they usually disappear so quickly you don’t get a chance to try them after two days!)
To make the perfect muffin, here are a couple rules to follow:
- Don’t use a mix – make your own. It’s easy to do and your ingredients are fresh.
- Don’t over mix – for the best texture, stir the batter with a spoon just enough so that the ingredients are well-incorporated – this makes them soft. Mixing them too much will make them heavy.
- Use paper liners in the muffin tins – it makes for easier eating, easier clean up, and less fat (since you don’t have to grease the tins).
- Use a nice quality muffin tin.
Apple Muffin Recipe
Ingredients for Apple Muffins:
- 1 ½ cups flour
- 1 3/4 tsp. baking powder
- ½ tsp. salt
- ¼ tsp. nutmeg
- ½ cup sugar
- 1 egg
- 1/3 cup oil
- ¼ cup milk
- 1 large apple, cored, peeled, and cut in very small pieces
- ¼ cup butter, melted
- ½ cup sugar
- 1/3 cup flour
- ½ tsp. cinnamon
Directions for making Apple Muffins:
Preheat oven to 350 degrees. Put 12 paper liners in a muffin tin.
In a large bowl, stir together the flour, baking powder, salt, nutmeg, and sugar until it is well-incorporated. Add the egg, oil, and milk. The batter will be very thick. Stir together just enough to combine. Add the apple and stir it in gently.
Fill each of the muffin cups 2/3 full (don’t overfill, as they need room to rise and your topping will fall off in the baking process if they rise too far over the pan).
Topping: In a small bowl, mix together the melted butter, ½ cup sugar, 1/3 cup flour, and ½ tsp. cinnamon. Sprinkle this mixture evenly over the muffin batter in each of the muffin cups.
Bake the muffins for 20 – 22 minutes at 350 degrees. Remove from the tins to cool on a rack. Enjoy!
