Did you know that apple cider can not only be used in recipes, but also for marinades? (It’s a great meat tenderizer).
Cider can also be boiled down to intensify the flavor and thicken it; it can then be served as a syrup to pour over meat or vegetables, or used as a glaze to brush over pork loin (or tenderloin), vegetables and chicken (you can baste with it or pour in a cup (or two) just before roasting as well).
Want a delicious salad vinaigrette? Combine 2 Tbs of cider vinegar, ½ cup of canola oil, ½ cup apple cider, 1 Tbs Dijon mustard and a dash of lemon juice (you can add more than a dash, if desired; it’s up to you!), then whisk together (or beat lightly).
Mix and Match Side Dish Combinations (all low-fat and low-calorie)
In a skillet over medium heat, saute 1 clove of garlic, minced and any one group of these veggie ingredients: ¾ lb spinach, coarsely chopped; 2 leeks, chopped and 2 Tbs pecan pieces, toasted; 1 zucchini, chopped and 1 red pepper, chopped; ½ small red onion, chopped; ¼ lb of green beans, sliced and 2 Tbs pignoli nuts; 2 carrots, sliced and ¼ lb mushrooms, sliced; 4 scallions, sliced and 4 radishes, finely chopped.
Saute in 1 Tbs hot oil, stirring, until tender.
Stir in any one group of these seasonings: 1 Tbs minced fresh thyme and ½ tsp of grated orange peel; 1 Tbs minced fresh ginger-root and 1 Tbs chopped cilantro; 1 Tbs minced fresh mint or 1 tsp dried; 1 Tbs ground cumin and ¼ tsp ground red pepper flakes; 2 Tbs chopped fresh dill or 1 Tbs dried and ¼ cup of white wine; ¼ cup of chopped parsley and 1 Tbs minced fresh oregano or 1 tsp dried; 1 Tbs minced fresh rosemary or 1 tsp dried and ½ tsp grated lemon peel.
Add any one item from this starch group: 1 ½ cups of bulgur wheat, prepared according to package directions; 1 ½ cups couscous, prepared according to package directions; 1 ½ cups of rice, prepared according to package directions; 1 ½ lbs red potatoes, quartered and steamed until tender; 1 loaf seeded Italian bread, sliced and toasted; 1 ½ cups quinoa, prepared according to package directions; or ½ lb plain and/or spinach pasta, prepared according to the package directions.
Now cook the particular item, stirring, until heated through.
Please Note: For the Italian bread slices, rub with 1 clove of garlic, halved; top with seasoned sauteed vegetables.
