The ingredients for this easy beef soup recipe can be found at any Hannaford store in the Bangor area. The soup is simple to prepare, and smells wonderful as it cooks slowly in a crock pot. It is possible to make this on a stove top if a crock pot is not available.
½ of an acorn squash
10 small red potatoes
1 large sweet potato
small beef roast or medium steak
black pepper grinder
½ carton of beef stock/broth
Cut squash and all the potatoes into bite size chunks. Place these in the crock pot.
Place the beef portion on top of the potatoes in the crock.
Add 3 or 4 twists of the garlic grinder, and 3 of the pepper grinder.
Pour the broth over the food, then add water until the liquid fills to 2/3 the way up the crock.
Cook on low 6 hours, or high 3 to 4 hours.
Use cheap cuts of meat to save money.
Experiment with the types of squash, potato combinations and meats used.
Use organic ingredients for a healthier meal. Some experts say that purchasing the foods with thin or no skins organically is enough to ensure healthier recipes.
Organic herbs and spices may seem expensive, but they are not much more so than traditional. Well worth the little extra money in taste and freshness.
Serve this soup with warm honey oat bread that has been slathered with honey butter.
Also, serve with a side salad of greens and tomatoes or cucumber, for added vegetable servings.
