Breakfast may be the most important meal of the day, but it can also be the most delicious. From French toast to stratas to coffee cakes, breakfast doesn’t have to be the same old cereal, eggs or toast day after day. Liven up the breakfast table a little with new choices that will soon become old favorites. The whole family will love this blueberry coffee cake.
Remember that coffee cakes fall into the quick bread category, which means they should not be over-mixed. Doing so can result in a tough final product.
To keep the eggs and butter from curdling, make sure that the eggs, butter and buttermilk are at room temperature before using. Eggs are good for breakfast but not scrambled into your coffee cake. If the wet ingredients are approximately the same temperature, this will not happen.
For best results, do not thaw blueberries first. They will not turn the batter blue if they are still frozen.
Blueberry Coffee Cake
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs, beaten, room temperature
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 cup buttermilk, room temperature
- 1 stick butter, melted and cooled
- 2 cups frozen blueberries
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 cup flour
- 1/4 teaspoon cinnamon
- 1 stick butter, melted
Preheat oven to 350. Lightly grease a 15×10 inch jellyroll pan.
In a medium bowl, sift together the flour, baking soda and salt.
In a mixer bowl, beat together the eggs and sugar until pale yellow. Stir in the butter and vanilla; mix well. Add the dry ingredients alternately with the buttermilk, beginning and ending with the flour mixture. Be careful not to overmix or cake will be tough. Fold in the blueberries.
Pour the batter into the prepared pan and spread evenly. Sprinkle topping over all. Bake at 30-35 minutes or until a toothpick inserted in the center comes out clean.
