After many years of being a stay at home mom, I decided to enroll in school to pursue a degree in nursing. To complete that degree, I am enrolled in many classes that will help me reach that dream, and allow me the tools to provide nutritious meals for my family. My favorite class this semester is Biology 101, Nutrition. Although, as a mom of a daughter with type 1 diabetes, we have learned to count carbs, reading labels has helped us maintain a healthy diet. Since i am a full time student, money is tight, which does not allow us th eprivilege of dining out too often. Through my nutrition class, I have learned how to mimick some of our favorite restaurant foods at home. My kids favorite meal is chicken tacos. We use low-fat corn tortillas, whole chicken breast shaved, and loads of fresh veggies, like avocado, tomatoes, and lettuce. This meal is fun for all of us to make together, offers tons of nutritious vitamins, and helps my daughte keep her blood sugars low. I believe with a little creativity, and research, you too can make a healthy meal at home!!
