When one reads the above statement, moonshine may be the first thing that comes to mind, prompting them to ask, “Why would a Registered Dietitian suggest moonshine for breakfast?” White lighting was a brand of cider brewed by Scottish Courage in the UK from the early 1900s until 2009. It was known for its high alcohol content and low price, making it the drink of choice for those who desired alcohol intoxication at a minimum price. However, a Registered Dietitian is not recommending moonshine or white lighting for breakfast, or any meal for that fact, but recommending the White Lightning Omelet from Le Peep in Belle Meade for a delicious and nutritious breakfast!
Le Peep puts a wholesome prospective on your neighborhood breakfast and lunch. Fresh, simple, elegant and inviting are just a few words to describe Le Peep. It has become mine and my husband’s favorite neighborhood spot for breakfast. All Le Peep restaurants are owned by your friends and neighbors, no big corporate chain involved here, making it different from the rest. They actively support local neighborhood organizations and charities, so every time you walk through their doors you are also supporting them.
My favorite item on the menu happens to be one of the healthiest menu items as well, the White Lightning omelet! This light and fluffy omelet consist of egg whites, lean diced chicken, green chilies and blended cheese topped with fresh sliced avocado, diced tomatoes and a side of fresh salsa. This omelet is loaded with protein found in the egg whites and lean chicken. Protein helps build healthy skin, hair, nails and muscles. Egg whites are a great way to increase protein in your diet without increasing calories, fat or cholesterol. One egg white contains 15 calories, 0g fat, 0mg cholesterol and 4g protein. Being low in fat and cholesterol makes them an excellent source in helping lower your risk of heart disease. Egg whites also contain essential minerals including potassium, magnesium, calcium, phosphorus, copper, zinc and iron and essential vitamins including folate, B12, niacin betaine and choline. Essential minerals and vitamins are the building blocks of our cells and proper body, brain and organ function rely on them.
Green chilies and avocadoes also provide nutritional benefits in this omelet. Green chilies are a rich source of vitamin C, which helps to protect against immune system deficiencies, cardiovascular disease, prenatal health problems, eye disease and even wrinkling of the skin. Get an extra dose of vitamin C with a glass of Le Peeps fresh squeezed orange juice. Avocadoes contain monounsaturated fats, also known as “healthy” fats. Monounsaturated fats help to lower the risk of breast cancer, reduce cholesterol levels, lower the risk of stroke, reduce belly fat, assist in weight loss and lessen the pain and stiffness for sufferers of rheumatoid arthritis.
So for those who desire a breakfast with high nutritional content, make the “white lightning” omelet at Le Peep your meal of choice!
